Ingredients

  • 2 1/4 cups (18 ounces if weighing) cake flour
  • 1/2 teaspoon double-acting baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup room temperature butter
  • 1 1/2 cups granulated sugar
  • 2 room temperature eggs
  • 6 mashed ripe bananas
  • 1 teaspoon vanilla extract
  • 1/4 cup plain greek yogurt or buttermilk
  • 3 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Grease an 11x13 inch pan, set aside.
  2. In a large mixing bowl, sift the cake flour with the baking powder, baking soda and salt; set aside.
  3. In a separate bowl, use a stand mixer (or a handheld mixer) to cream the butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time.
  5. Prepare the mashed banana mixture - mix together the vanilla extract and the yogurt or buttermilk with the mashed bananas.
  6. Add the flour mixture to the butter and sugar mixture in three parts, alternating with the banana mixture. Mix batter until smooth after each addition.
  7. Fold in the chocolate chips.
  8. Transfer batter to the greased 11x13 inch pan, bake 1 hour, or until the top is browned and a toothpick inserted into the center of the cake comes out clean.
