- 2 tablespoons olive oil, divided
- 1 pound ground turkey (you can also use cooked chopped chicken if you prefer)
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 (4-ounce) can of diced jalapeños
- 1 (4-ounce) can of chopped green chiles
- 2 teaspoons of ground cumin
- 1 teaspoon of dried oregano
- 1 teaspoon of ground cayenne pepper
- Kosher salt, to taste
- 4 cups (32 ounces) of chicken broth
- 4 cans of great northern beans, drained and rinsed
- 8 ounces of raw chopped Tuscan kale
- 1 cup of shredded pepperjack cheese
- Greek yogurt, for garnish
- Cilantro, for garnish
- Sliced green onions, for garnish
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat; add 1 pound of ground turkey and cook until thoroughly browned.
- Add 1 tablespoon of olive oil and stir in 1 medium chopped onion, cooking until soft and translucent (about 5 mins).
- Mix in 3 minced garlic cloves, 1 can of diced jalapeños, 1 can of chopped green chiles, 2 teaspoons of cumin, 1 teaspoon of dried oregano, and 1 teaspoon of cayenne pepper.
- Continue to cook, stirring frequently for 3 mins, then add 4 cups of chicken broth and 4 cans of great northern beans.
- Simmer for 15 mins and add 8 ounces of chopped kale at the end, stirring until slightly wilted.
- Salt to taste, then top with shredded cheese, Greek yogurt, cilantro, and sliced green onions for garnish.
