    Game of Thrones Inspired Guacamole Deviled Dragon Eggs

    These colorful guacamole deviled dragon eggs will be the perfect appetizer for your Game of Thrones viewing party!

    Who's excited for the premiere of the last season of Game of Thrones tonight!? If you're hosting a watch party or just want to make some delicious snacks, these guacamole deviled dragon eggs will hit the spot! For this recipe, you'll need 12 large eggs, green gel food dye (or any other color you want your dragon eggs to be!), 2 very ripe avocados, sour cream, green onions, cilantro and some spices. Let's get cooking!

    First, steam the eggs. Why steam instead of boiling? The steam from the water permeates the shell, which makes them easier to peel than if you boiled them. Fill a large pot with an inch of water and bring it to a boil, then and place the eggs in a steamer basket above the water. No steamer basket? Simply place the eggs directly in ¾ in of boiling water. Cover the pan and steam the eggs for 17 minutes for 12 large eggs, or 15 minutes for 6 large eggs. If you're using smaller eggs, steam for 2 minutes less than the large eggs.

    While the eggs are steaming, prep the guacamole filling. Cut your avocados in half and remove the pits. Squeeze the avocado flesh into bowl and mash with a fork until it's smooth. You want the filling to have as few chunks as possible so it's easier to pipe into the eggs. Stir in the lime juice, salt, cilantro and green onions and set aside.

    Next, remove your eggs from the steamer basket, fill the pot with cold water, place the eggs in and shake the pot to crack the eggs and break up the shells without peeling them.

    Once the eggs are cracked (you want a lot of small pieces of shell for the dragon design), place each egg in a Ziploc bag with a small squeeze of food coloring. Massage the food coloring over the egg so it completely coats the egg shell. Allow the eggs to sit in the Ziploc bags with the dye for 30 minutes. Rinse the eggs in cold water and peel carefully.

    After peeling the eggs, carefully cut each egg in half using a sharp knife and gently remove the yolks. Add the yolks to the guacamole mixture and stir well, making sure the mixture is smooth. Arrange the egg halves on a platter and pipe or spoon mixture into the egg halves. Finally, top with chopped cilantro and serve!

    Ingredients

    Scale
    • 12 large eggs
    • 2 ripe avocados
    • Juice of 1 lime
    • 1 teaspoon salt
    • 2 tablespoons chopped cilantro (plus some for garnish)
    • 2 tablespoons chopped green onions

    Instructions

    1. Fill a large pot with 1 inch of water; bring water to a boil and place the eggs in a steamer basket above the water. If you don't have a steamer basket, simply place the eggs in ¾ in of water. Cover the pan and steam for 17 minutes for 12 large eggs (15 minutes for 6 large eggs).
    2. While eggs steam, prep guacamole filling. Cut avocados in half and remove pits. Squeeze the avocado flesh into medium bowl and mash with a fork until smooth. Stir in lime juice, salt, cilantro and green onions and set aside.
    3. Remove eggs and steamer basket from pot and, fill pot with cold water, place eggs in pot and shake to crack eggs and break up shells without peeling them.
    4. Place each egg in a Ziploc bag with food coloring gel. Massage food coloring over egg shell until completely coated. Allow eggs to sit in Ziploc bags with dye for 30 minutes. Rinse eggs in cold water and peel carefully.
    5. Cut each egg in half and gently remove yolks. Add yolks to guacamole mixture and stir well. Arrange egg halves on a platter and pipe or spoon mixture into egg halves. Top with chopped cilantro and serve!

    Notes

    We used green food coloring gel, but you can use any color you want! You can also prepare these with a traditional deviled egg filling, using mayonnaise, salt and paprika.
